Turkey and Apple Meatloaf

Ingredients


2 tsp olive oil

1/4 cup chopped sweet onion (if can tolerate)

1 clove garlic, chopped

1 medium Gala or similar apple, chopped coarsely)

1 tsp poultry seasoning or powdered sage

20 oz lean ground turkey

1 large egg, beaten

1/2 cup dry breadcrumbs

1/2 tsp salt (adjust to taste)

1/2 cup plus 2 tbsp unsweetened applesauce (use a brand with no added ascorbic acid; organic usually works for me)

2 tbsp honey


Directions


Pre-heat oven to 350 degrees F. Mix 2 tbsp of unsweetened applesauce with honey in a small bowl and set aside. Heat oil over in a medium skillet over medium-high heat. Add onion, garlic, chopped apple and poultry seasoning or sage. Saute about five minutes or until onion softens. Cool slightly. In a large bowl, add turkey, egg, breadcrumbs, salt, and 1/2 cup of applesauce. Stir until well combined. Add apple mixture and blend. Press turkey mixture into 8" x 4" loaf pan and shape. Bake at 350 degrees F. Spoon the applesauce/honey mixture over the meatloaf after 30 minutes, and cook for a total of 45-50 minutes or until thermometer registers 165 degrees F. Let rest 10 minutes before slicing into eight portions and serving.
